Buffalo Cauliflower Tacos

Well, it's been two years, but I finally created a recipe worth blogging! I've been trying to find meat alternatives for my meal prep while still maintaining flavor and fun! I LOVE anything buffalo, so I made buffalo cauliflower tacos! I also created a cucumber & celery salsa to cool it down! Any tortilla will work for the base of these tacos, or they can be placed in lettuce wraps (which make them a 1 green point Weight Watchers recipe!!).

Buffalo Cauliflower Tacos



Ingredients (Serves 6):
1 Head Cauliflower, cut into florets
1/3 Cup Frank's Red Hot (or another buffalo sauce)
2 tsp Olive Oil
1/2 tsp Black Pepper (divided)
1 tsp Garlic Powder
1/2 tsp Salt (divided)
5 Mini/Persian Cucumbers, diced
1 Cup Celery, diced
1/2 Cup White Onion, diced
1 Tbl Fresh Parsley
2 Tbl Fresh Lemon Juice
1/4 tsp Dried Dill
2 Tbl Light Mayonnaise 
Butter Lettuce or Tortillas

Directions:
Cauliflower:
Preheat oven to 400ยบ
Toss cauliflower florets with 2 tsp olive oil, garlic powder, 1/4 tsp black pepper, and 1/4 tsp salt
Bake for 20 minutes
Toss cauliflower with buffalo sauce
Broil for 3 minutes

Salsa:
Combine diced cucumber, celery, onion, 1/4 tsp salt, 1/4 tsp pepper, dried dill, mayonnaise, lemon juice, and parsley in a bowl. 
Keep in an airtight container in the fridge
