Blackened Salmon Tacos with Mango Slaw

Another year has passed without a single blog post! A lot has changed except for the fact that I am still cooking! In the past year I moved and got married - hence the blog name change. I am open to suggestions for a better title. Anyways, I am continuing to attempt healthy and fulfilling recipes. Here's one I prepared for taco Tuesday!

Blackened Salmon Tacos with Mango Slaw


Ingredients (makes 8 tacos):
1 lb Salmon
8 Corn Tortillas (can sub with flour or lettuce wraps)
1 Tbl Blackening Seasoning (homemade or store bought)
Olive Oil Spray
14 oz bag Cole Slaw Mix
1 Mango
4 Tbl Light Mayo
1 Tbl Honey
2 Tbl Cilantro
Juice of 1 Lime
1/2 tsp Salt
1/4 tsp Black Pepper

Directions:
Pre-heat oven to 400ยบ. Coat a foil lined baking sheet in olive oil spray. Cut the salmon into 4 filets and sprinkle with the blackening spice. Place the salmon on the baking sheet and bake for 16 minutes (can do less for a more pink center or more for a fully cooked fillet).

Meanwhile, make the mango slaw. Peel and dice the mango. In a large bowl, combine the mango, cole slaw mix, juice of 1 lime, mayo, cilantro, honey, salt, and pepper. Toss to combine and set aside. 

If using corn tortillas, I like to toast them over a flame on my gas stove top to get a char. If you don't have a gas stove top, you can microwave them for 30 seconds so they loosen up and don't break!

To assemble the tacos, peel the skin off the salmon and flake the fish. Add the fish and the slaw into each tortilla. 

Optional toppings: sour cream/Greek yogurt, hot sauce, avocado, scallions
